I was disappointed with this dish. When I read the recipe, I thought it was going to be really good. I thought it was just OK.

I found the prep time to be a bit more than 15 minutes, but it was time well spent. Everyone enjoyed it and it is definitely a dish you can proudly serve company.

My husband and I both loved the dish, however we both agreed that 2 tablespoons of Tarragon was a little much. We will reduce that to 1 tablespoon the next time.

Tarragon taste is over-powering.

After I had rubbed the top half of the tenderloin with the tarragon/honey mixture, I placed that side down on a cutting board covered with waxed paper, spread with the chopped pecans. Then I finished rubbing the pork w/the remainder of the mixture and sprinkled on the pecans. I placed the dish that I would cook the pork face down over the pork, lifted the cutting board and flipped. I didn’t lose a single pecan! Peaches and onions caramelized wonderfully and added great flavor. I also made the Crunchy Sweet Potato Bake and Spinach Salad with Cranberries and Pecans. All and all a huge hit at my dinner party!
