you bet i made this quite a few times. i serve 60 - 100 people for a brunch on sundays and they absolutely love it. i make it exactly as printed. i also serve with it suasage gravy and bisquits. wonderful!........rose

Terrific! My picky family loved it. The only modification I used was an additional egg and a full cup of cheese (half of which was diced American). I did add a few fresh chives near the end. If you have trouble getting the eggs to set, just gently lift the edges with a spatula & tilt your pan swirling the eggs to the outsides.

This recipe was very good but I had a hard time getting the potatoes browned and the eggs to cook. I eventually had to put it in the oven. I also added sausage which I think made the whole dish. The family loved it!!

Mega easy pretty tasty SUPER-SIZED OMLET! Next time I will try ingredient variations like sausage instead of bacon and salsa instead of tomatoes.

I made this for my Bible study group of 20+, so instead of making it in a skillet, I put it in a 9x13 baking pan in a 350 degree oven for 35 minutes, and substituted the smokies for bacon. This worked VERY well, and everyone enjoyed it!

I added onions to the potatoes and served with salsa, sour cream, and hot sauce. This was a fast and easy breakfast.

I added green onions and a small can of green chiles. I also seasoned the hasbrowns with garlic salt and pepper. On the top I used salsa instead of the tomatoes, and added a small dollop of sour cream on the slices when I served them. It was a big hit and quite delicious!

My husband and I loved it! Had to be careful not to eat too much. Was great reheated in the microwave the next day.
