I made this recipe the first time right after Thanksgiving, and you guessed it, I used left over turkey. This was a huge hit with my husband, and he said please, make it again. I am making it tonight with chicken.

There's nothing like a hearty Minestrone on those cold winter days. This was a keeper and I would make it again. Lots of possibilities, as you can supplement with other veges. as you wish.

This soup was awesome! I can't believe how easy it was to make. Thank you for this great recipe! I added a 15 oz. can of kidney beans (undrained) and will definitely be making this again and again.

This recipe was AWESOME. It was the easiest soup I have ever made. The Italian Dressing packet gave it such a wonderful kick. Next time I make it, however I will add a cup of extra water. My husband also suggested trying rice instead of the pasta sometime. This soup is so versatile, easy, and above all DELICIOUS!

This was easy and great. I gave the rest to my daughter and son in law. They loved it and asked that I make it again and give them the left overs. I plan to make it again for my daughters family in AZ when I go next month.

I substituted vegetable stock for the water. I made it the day before and added cooked pasta before serving so that they didn't get soggy or absorb too much of the soup. The flavors had a chance to come together and it was wonderful!
