I added a few drops of mint extract to the whipping cream to kick up the mint flavor a bit. Also, next time, I'll use real whipped cream instead of Cool Whip, and I'll make non-instant pudding to improve the textures.

I wanted to make something St. Patrick's Day related, being IRISH and all. I wasn't sure what kind of response I would get from the participants aka my family, but I made this dessert anyway. All I can say is WOW! My kid's devoured it right down to the last little bit on the glass. Even my hubby loved it. I would definately make this again and try paring it with the Corned Beef Brisket and Cabbage for the St. Patrick's holiday. They BOTh were a smashing hit!!!

Oh, one other thing, I used the sugar free choc. pudding. Less IS more. My family devoured it!!
