I used the cheesecake base of this one to make mini turtle cheesecakes which were a huge hit with my family. I made the crust with oreo cookie crumbs as they recommended for the cheesecake square version and then put a caramel ice cream topping inside each of the cupcakes before adding the cream cheese mixture. After they had been baked and refridgerated overnight, I topped each cheesecake with pecans, drizzled caramel topping and melted chocolate chips. The caramel topping inside was a major surprize and it worked very well. The kids and adults just loved them! I will definitely make this one again and will try the original fruit version later in the year. Also, I used neufchantel cheese in this recipe without any problems.
My family and friends love this recipe. Whenever I make it, I have to make 2 batches, because it disappears so quickly! I also make it using Splenda for diabetics, and they rave about it! I have also used Oreo cookies for the base, instead of vanilla wafers. This is the best recipe I have ever come across, and it is so easy to prepare!
this is a great recipe. I double the amount and make it for a school pot luck. It was so easy to serve. We did not need to cut it nor use plates. It was the first to be out. I was ask to make it again for the next pot luck.

Awesome, easy recipe. Try adding a fun extract and topping, such as coconut extract with shredded coconut on top, or almond extract with slivered almonds on top. I also found that the cookie crust is unnecessary.
