These were so easy and versetile. I used a ginger cookie is the bottom. I also add about a 1/4 cup of sweetened lime juice to the batter. These then became little lime cheese cakes and boy were they good.

I used to make this recipe using low fat vanilla wafers. This is a nice sitch.

It was easy to make and great to eat. I used the vanilla oreo cookies because I am not a big chocolate fan. I will make this again.

I love the mini size of these desserts, and it is perfect portion control. The filling is rich and creamy with a great chocolate crust. These are perfect for parties or when you need to indulge in a sweet treat.

This is quick and easy. My co-workers enjoyed them so much, they have requested that I bring them for all our luncheons. Try sliced strawberries and drizzle white chocolate over them. Very good.

I have made this recipe for 25 years or more. The original used canned pie filling for the top which is great, but the fresh fruit sounds very nice. Also I use a vanilla wafer for crust - like the choc. oreo cookie idea.

So Easy! If you need a fast dessert and great to take for parties! Don't stop at the fruit topping though, try drizzled chocolate, cherry topping, heart with pink icing for Valentine's day. The list is endless! Let your imagination take you away!
