This one is very easy, and the rice makes it nicely filling (I used sticky rice to keep it from falling out). I would definitely make this one again.

I made this recipe last night for my boyfriend and he loved it. I couldn't believe how easy it was to prepare. This has definately become one of our new favorites.

Excellent! My husband and I have moved this recipe to the top of our list of favorites. I skipped the oil and cooked the chicken in a nonstick pan.

this recipe was easy and delicious. i made it for my boyfriend and his friends, and they cleared their plates! and it only took 15 minutes.

For a low fat version I cut the oil and cooked chicken in 1/3 cup water, draining water when fully cooked. I used fat free shredded cheese and topped with salsa and light sour cream. You could also use low fat tortilla shells if you wish. My 1 1/2 year old son loved it!

If you're not going to use Salsa add about 1 1/4 cup water in it's place. And if you like a lot of chicken add more to your taste. Overall it was a great recipe. Absolutely wonderful for little kids. It didn't drip a lot so paper plates were just fine for us. But again, I didn't put any salsa in.
