Great summer dish! Quick, easy, healthy & delicious! We had zucchini, squash, mushrooms, bell pepper, and onion on hand so that's what we sauteed in some EVOO and garlic. Instead of spaghetti sauce I used a can of diced fire roasted tomatoes and a little tomato sauce to thicken it up. To add a little flavor I added a little salt, pepper, dried oregano, and crushed red pepper.
