It was great to see one of favorite childhood recipes that I made with Mom over 35 years ago. I still make it today when I feel like something quick and easy (so does Mom and she's 84). It's quick, easy and affordable! I still like to use the english muffin so the sauce can get into the nooks and crannies (now that's dating me!!) I don't like parmesan cheese, so I leave that out. I've also used crumbled feta or goat cheese. Very good, as well. It's good to use the toaster oven to pre-toast the bottom of the muffin, otherwise it will get soggy once the the sauce is on it if you use the oven (thanks, Mom). Keep it crunchy. Thanks for bringing it back! Now I know what's for dinner!
