Very quick and easy lunch! I followed the tip and brushed w/ olive oil and herbs and broiled until toasted, then added cheese and toppings and broiled until melted - really good! the only thing...the bottom of the muffins were a little soft/soggy, so I'll try to fix that next time.

We have picky eaters in our house however these little pizzas were gone within minutes. I doubled the recipe because we have four children, 3 of them being boys. This is a great, easy recipe for busy weeknights.

Our oldest has Aspergers Syndrome (ASD), and an extremely picky eater. I never know what to make because texture/color bother him. This was great. Each of our 4 kids as well as ourselves picked their own toppings!! It was a hit!!

I brushed the english muffins with olive oil and sprinkled italian seasonings on them, then broiled to toast. Added, sauce and other toppings, then broiled again until cheese is melted. Adds another layer of flavor to an already yummy, quick meal.
