My family really enjoyed this fast and easy recipe. This recipe would be great if ham chunks or bacon were added. Served with a fresh fruit salad this was a refreshing meal.

I used hash browns with onions and peppers, added leftover Thanksgiving turkey breast cubed, and some cajun spices to the eggs and it was very good--just kicked up a little!

I made the recipe but I used the eggbeaters and added additional leftover, i.e. potatoes, veggies and meats as well as some cheese. Basically, we have this kind of frittata at least once a month. We just call it a "Farmer's Breakfast", yummy Karin

As a working mother, the dish was a hit with my family and easy for me to prepare. I am excited to try different vegetables and maybe add meat to this delicious recipe.

This italian "kicked it up a notch" by adding 3 links of hot italian sausage, browned and crumbled first, a little garlic powder and onion powder. It was approved by the whole family!

My husband really likes this dish and he asks for it again & again. Great for breakfast or dinner. My children's friends want to have dinner with us when I fix this dish.

I added ground turkey. My sone ate the veggies without a murmur- my hubby would have liked different veggies and more cheese and spices. I will try it wiht italian sausage next time and omit red peppers. It was bland for me too- but I liked the ease of slipping in the veggies to my meat and potatoes crew.
