This is my first recipe and I'm very excited. I'm going to try this this week sometime. Definetly going to add some meat, but overall sounds GREAT. Looking forward to more like this. THANKS!!!!!!!

This is a very easy and tasty meal for a quick night. The only change I would make is that I would use a pan that could go in the oven. I ended up putting mine in the oven for about 10 minutes after the egg had set sufficiently (350 degrees) just to brown the top. You could also stick it under the broiler until lightly browned. I used mushrooms, broccoli and ham, with a mixture of colby longhorn, colby jack and swiss cheeses. The texture is very firm and the potatoes make a pie like crust.

I rate this recipe as very good just by seeing the picture and reading the recipe. Sounds great, and thanks to everyones comments and suggestion for the various add too, and take aways from this recipe.
