Although this recipe is good, I agree that it needs to be 'spiced' up. I love making this into a mexican dish by omitting the potato & adding in diced cooked chicken, bell peppers, onions & cheddar cheese. I serve it with some salsa and sour cream. You can do so much with the 'idea' of this recipe (try diced ham.) Be creative & enjoy!

Easy to modify by changing the varities of vegetables used. Also, top with another cheese such as cheddar or swiss which gives it a whole new twist.

Quick, easy, and fast, especially for working families, you can substitute almost anything you have in the fridge to go with the eggs and not have to make a special trip to the store. I used leftover potatoes, spinach, onions, peppers, mushrooms, and shredded cheese, everyone enjoyed it

Sounds great. Can't wait to try it. Brocolli, Red and Green peppers, garlic, etc., it sounds like you could add favorites to this or just leave as is and it would be delicious!

My very first thing,YEAH..I sent it to my daughter-in-law, what a great recipe for people who work really long hours and need something quick. I read the readers comments and I like this recipe as is but will try something different with it next time maybe...I am really gonna enjoy this site!!! Thank you..happy cooking everyone.

I have been preparing this recipe for at least 3 years , I thought I was original. However I spice it up a bit . sometimes I use egg substitutes, add one dash of tabasco sauce, a few shakes of garlic powder and a sprinkle of Emeril's essence. sometimes I vary the cheeses. I have never served this recipe or a variation without my guests asking for more. Thank you

Wonderful but needs some zip, I added some hot salsa went easy on the parmesan & added extra Mozzarella, was yummy, I made it for breakfast when all the kids came home, everybody loved it.
