We thought this recipe was a little bland, but I am taking the suggestions offered by others and will add sausage and/or bacon. It was simple and quick to make and was attractive to look at.

I made this in the oven instead of in a skillet and added sausage. It was great! A very statisfying one-dish meal!

Although I haven't made this particular recipe, I have one similar that uses a stone or cookie sheet. Only difference is you don't need to cook anything in oil, you use a spray. Also, you make the scrambled eggs in the microwave, and the hashbrowns are broken up and placed as a crust. This recipe is from Pampered Chef and I always use Kraft cheeses. (I made this at my Pampered Chef party, I am not a distributor.)

It took awhile to set up in the pan. Might be better baked in the oven, but it was very good tasting.

Tried this recipe today and it's very easy to make. Though I don't have a skillet, I baked it in an oven proof dish till the eggs set. Ate it with some rice for dinner ... yummm! Thanks for the recipe!
