MY MOTHER ACTUALLY WAS BORN AND RAISED IN NAPLES OTALY AND SHE TAUGHT ME HOW TO MAKE THIS DISH!!

This is a Italian staple at a luncheon a quick fill in or as an orderve We have many variations of a fritatta and mostly done with leftovers including spaghetti

WE love the Skillet Frittata with lots of vegetables for noon or evening meal. But for breakfast, I use only onion, bell pepper and fresh diced tomatoes ... and add sausage or diced ham. A little shredded Cheddar Cheese also adds extra flavor. A wonderful 'one dish meal' !!

I made this at work and everyone loved it. It's quick, easy, tastes great and is filling.

I used smoked sausage instead of the veggies. I would make this dish again.

I make this often , except i use sausage instead of vegatables, and for the side i make pepper gravy.
