Absolutely the best solution for avoiding major cooking skills and DELICIOUS....i just added a few chopped fresh chives before serving

This recipe was easy to make for a quick dinner. It browned on the bottom too quickly and nearly burned. I left out the hash browns and added broccoli, carrots, and cauliflower for my vegetables. I also used cheddar chees to top it.

Very Good. My 2 year old even ate it. I put it in the oven the last few minutes under the broiler to help finish melting the cheese.

This was an easy one. I am a daycare provider and it is quick eating for me in the a.m. Even some of my children ate this. I was very impressed. Keep the recipe's coming, Nola 49

I read one cooks suggestion to make this low fat. I used egg-beaters instead of real eggs and extra virgin olive oil instead of vegetable oil. Also, I shredded my own potatoes to cut the fat they often add to processed potatoes, and added a little 2% reduced fat cheese. I hope this helps some of you other dieters out there.
