i cooked this 3x already & it is really good! the third time i did, i served it to my colleagues and they love it too. great recipe (healthy but yummy) & very easy to make! :)

Why people rate recipes they haven't tried escapes me. What is the point? 'It sounds good, I'll try it!' offers no value. How stupid! I actually made this. It was very good, but fattening. I'd like to see nutritional information for these recipes.

When making this recipe with the tomatoes, green onions and parsley, try with some sauteed mushrooms as well.

first time checking out this site. I will make this dish this week. can't wait. only thing is what to serve it with. this is a side dish. what meat and other dishes would you serve it with? please help me to decide.

I found your recipe very good. For years I've been making this with several variations of vegetables..a good way to get them in the kids. Our favoriate was zucchini, onions, garlic and eggs. I would scramble a dozen eggs and about 4-5 med. zukes and one small onion chopped and 5 cloves of fresh garlic chopped. No milk but lots of parmesan. brown the vegetables then pour on the eggs and parmesan cook and servce. Great with hot garlic bread and fried potatoes.

I rated this dish 5 star even though I have not tried it yet, but because I love beautiful dishes. And I am sure this one is great. But for health reasons, I can only have 2-3 eggs a week, so I will try it with egg beaters.

I've made it three times in the last month! It makes a quick and easy supper. I use a little more potatoes, and, shredded cheese instead of the grated parm. My husband likes it, too.

We have used the potato-egg combination for years, but prepared somewhat differently, and with fewer vegetable additions. This one is an inspiration to try lots of variations!
