I didn't have Velveeta Cheese so I had to alter the recipe a bit but it was still delicious!!!

My family enjoyed this recipe. It was very good with tortilla chips. Next time I would use taco seasoning on the ground beef to give it more flavor and be sure to use a very chunky salsa. I will make this recipe again soon.

Great use for left-over spaghetti. I agree that baking would be the best for this recipe but I also think extra cheese helps the taste. I also used ground Italian sausage instead of ground beef and it tasted great.

Next time I would use the Mexican flavored cheese.

This is THE BEST Mac & Cheese recipe that I have found. It is so creamy with the Velveeta Cheese. My husband absolutely LOVED this recipe and is begging for me to make it again tonight. Oh, I used ground turkey instead of beef and it is just Fabulous. Give that a try for a little healthier spin on this recipe. :)

I used whole wheat thin spagetti broken into small pieces since that was all I had on hand. I also added about 4 more ounces of cheese, since I love it, but it would have been just fine per the recipe. Very easy to make!!!!

Made 11/2004. My husband & I really liked. I used one can of Rotel - Chili Fixin's Style - and didn't add the chili powder. I'm thinking of baking this the next time - assemble the ingredients and then bake for 30 minutes - see how that turns out!
