I made this for easter brunch and it was a huge hit. Followed the recipe exactly and it turned out delicious. This satisfied even the pickiest eaters and the worst critics.

I made this last Saturday for breakfast, it was a big hit! My family asked for me to make it again today for breakfast, and of course I did. Great way to get your kids to eat spinach. Love it!!

I made this quiche just a week ago and it was fabulous! I used a lot more bacon than the recipe called for - I do think next time I will cut back on that but it was still so incredibly yummy. I would like to try this with Swiss cheese instead of the cheddar. The best thing is that I keep brainstorming great ways of how to make this a lean quiche - it will be so easy - egg substitute, turkey bacon, fat free cheese, etc! Can't wait to make this again!

This was a very fast,easy and delicious recipe. I used 4 eggs instead of 2 and also added some chopped chicken beast. Yummy! My family loved it. Definitely making this one again.

This is my official favorite quiche base. I've kitbashed it three different ways now, in addition to the original recipe, and it's been fantastic every time. The latest version: instead of spinach, I sauteed with bacon 1 each carrot, tomato, smallish zucchini and yellow squash, and half a red onion until soft; subbed swiss and parmesan cheeses for cheddar, and baked the quiche in a deep dish pan (very important). I've also used broccoli in the veggie mix and ham instead of bacon. It's versatile and not too heavy with only 2 eggs. Works fine with 1% milk, doesn't need cream like some other quiche recipes.

This was my first quiche, and it was quick and easy. I read some of the other reviews and added an extra egg and it came out perfect! But I do love spinach. I look forward to making this recipe again and again with different variations...

Yummy! This is the 1st quiche I've ever made & it was great! (My husband is a picky eater & he ate almost 1/2 of the pie!) The cheese on top burned so I just kinda peeled off the top layer. I used fresh spinach & omitted the bacon. If using fresh spinach, I'd recommend a "deep dish" pie crust as I used a regular one and I think that's what caused some egg & cheese to run over. Thanks!

I made this with 3 eggs instead of 2 and still wished that I had put more eggs in. Other than that it was wonderful.
