Made it as a side dish for fish. I used a frozen pie shell and substituted swiss cheese for the cheddar and since I didn't have any bacon, I used pepperoni. Will definately make again.

I love quiche! It's a great way to get your protien, veggie, dairy, and carbs all in one. To make things move a little quicker you can buy a premade crust and instead of crumbling the bacon, cut it in small pieces BEFOREyou cook it. Then it's ready to go. This is a great recipe and one of the only ways I can get hubby to eat spinach. Definately a keeper.

This recipe was a bit hit at our house. What wasnt eaten at dinner, was eaten the next day for lunch/ at home and taken to work. For Lenten season we substitute bacon and just added canned mushrooms. Excellent. But make more than is needed for one meal. Its even better the next day too!

Excellent! I squeezed the water out of the spinach and the filling only came half way up the shell, but was delicious. I added a touch of Cayenne pepper instead of black and also a touch of freshly ground nutmeg.

AFTER READING THE COMMENTS ON THE WEB SITE, I ADDED A LITTLE LESS THAN THE TEN OUNCES OF SPINACH AND IT WAS REALLY DELICIOUS. USED A FROZEN PIE CRUST TO SAVE TIME AND ACTUALLY MADE UP THE MIX A DAY BEFORE AND REFRIGERATED UNTIL I WAS READY TO ACTUALLY BAKE IT. VERY, VERY GOOD.
