I have been looking for an easy sweet potato recipe, and I have found it! It's easy to scale back for 2 people, and is quick to put together. The marshmallows in the sweet potatoes make a wonderful flavor combination. My husband loved it!
My family now requests that I make this for ALL gatherings. Even the non sweet potato people eat this and go back for secconds.

I think everyone was making this one for Thanksgiving. :-) I too made it and it was a hit! I used mini marshmallows instead of the large ones though. Excellent and EASY!
I made this recipe for Thanksgiving, and not only was it EASY, but everyone loved it! (I made the recipe slightly different) by adding brown sugar, and increasing butter, cinnamon, salt & marshmallows. After it was all mixed in with the sweet potatoes, I put them in a casserole dish. I then made another batch of the butter, cinnamon, salt & marshmallows, and poured it all over the sweet potatoes. After about 10 minutes, it stiffened on top of the sweet potatoes. I then baked it in the oven as the recipe called. Before taking it out, I added more marshmallows to the top, and let them puff up a little bit. EVERYONE loved this...even people who didn't like sweet potatoes before hand. They said this tasted more like a dessert. YUM! Highly recommended!
