I tried it for an office party and it was a huge success. I have used it since then and made modifications depending on the spirit of the event. It's so simple and comes across like you spent a lot of time on it.

Only leave on the grill for 2 minutes on each side. Dad left it on the grill too long and I thought they were too crunchy. Dad liked them that way. I might put olive oil on the inside of the tortillas before adding the mixture.

slice pita bread in half, fill not too full with mixture. wrap in foil if using BBQ. guests will love their personal packets. wonderful recipe!

I would definately take the extra time to seed, and chop kalamata olives, it's so much better and makes this recipe superb instead of very good. I used a couple tablespoons of chopped cilantro as a garnish after I grilled the quesadillas - WOW

These were excellent. I made mine in a grill pan on the stove. The only problem is that they were hard to cut.
