Layered Mexican Casserole

We took the best of Mexican food—chips, corn, beef, salsa, sour cream—layered it and baked it to perfection. A hearty combination of flavors for a crowd-pleasing casserole.

What You Need

1/2

lb. ground beef

can (11 oz.) corn, drained

1-1/2

cups TACO BELL® Thick & Chunky Salsa

cup BREAKSTONE'S or KNUDSEN Cottage Cheese

cup BREAKSTONE'S Low Fat Cottage Cheese with Calcium and Vitamin D

container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream

cups tortilla chips, divided

1-1/2

cups KRAFT Shredded Cheddar Cheese, divided

Make It

HEAT oven to 350°F.

BROWN meat in large skillet; drain. Add corn and salsa; cook 5 min. or until heated through, stirring occasionally. Mix cottage cheese and sour cream in small bowl.

LAYER 2 cups chips, half the meat mixture, 3/4 cup cheddar and half the cottage cheese mixture in 2-qt. casserole. Repeat layers of chips, meat mixture and cottage cheese mixture.

BAKE 35 min. Insert remaining chips around edge of casserole; top with remaining Cheddar. Bake 10 min. or until cheese is melted.

Substitute

Substitute 1 cup thawed frozen corn for the canned corn.

Adding a spicer salsa can also pic up the flavor. Substituted corn chips and turned out great.

I added Taco seasoning to the meat when I browned it and that enhanced the flavor. This makes a large casserole. My husband and I ate it for 2 meals and still didn't finish it all.

I guess if you don't have teeth, you may enjoy this. Mealy and mushy. The taste is very one dimensional. Until the texture of this recipe can be improved, I wouldn't bother correcting the flavor. One of the few BAD recipes on this site, IMO.

Love this dish- easy to make and everybody loves it, in all kinds of crowds. I double the meat to an even pound, add more cheese, AND add a packet of taco seasoning in the meat for flavor.

Very good! Everyone in the house loves it, from my 2 year old to my 42 year old!
