Layered Mexican Casserole

We took the best of Mexican food—chips, corn, beef, salsa, sour cream—layered it and baked it to perfection. A hearty combination of flavors for a crowd-pleasing casserole.

What You Need

1/2

lb. ground beef

can (11 oz.) corn, drained

1-1/2

cups TACO BELL® Thick & Chunky Salsa

cup BREAKSTONE'S or KNUDSEN Cottage Cheese

cup BREAKSTONE'S Low Fat Cottage Cheese with Calcium and Vitamin D

container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream

cups tortilla chips, divided

1-1/2

cups KRAFT Shredded Cheddar Cheese, divided

Make It

HEAT oven to 350°F.

BROWN meat in large skillet; drain. Add corn and salsa; cook 5 min. or until heated through, stirring occasionally. Mix cottage cheese and sour cream in small bowl.

LAYER 2 cups chips, half the meat mixture, 3/4 cup cheddar and half the cottage cheese mixture in 2-qt. casserole. Repeat layers of chips, meat mixture and cottage cheese mixture.

BAKE 35 min. Insert remaining chips around edge of casserole; top with remaining Cheddar. Bake 10 min. or until cheese is melted.

Substitute

Substitute 1 cup thawed frozen corn for the canned corn.

I made this recipe last night and it was a huge hit with the family. Everyone had at least two helpings, including the kids. I am definetly adding this to my list of recipes!!

I had seen this recipe before using miracle whip instead of cottage cheese.. they are both pretty good but, my family likes the miracle whip version best.. it gives the flavor a little bit more zing. I make this at least once a month.

This casserole was excellent! It requires a lot of salsa, but don't let that stop you from enjoying this great recipe! I served Chips and Salsa for an Appetizer, some refried beans (With shredded cheese and salsa mixed in) on the side, (and/or spanish rice), and Sopapillas with vanilla ice cream for dessert.

My husband and I enjoyed this casserole, and thought it was quite good; my 12 year old son and his friend however did not like it . . .so at our home, it's not too "kid friendly."

It wasn't bad, but the chips get a little soggy at the bottom after cooking them.
