Mandarin Mousse Mold

Layers of mandarin oranges, orange gelatin and whipped topping blended with orange gelatin create a pretty and refreshing salad or dessert mold.

What You Need

1-1/2

cups boiling water

pkg. (6 oz.) JELL-O Orange Flavor Gelatin

cup cold water

can (11 oz.) mandarin oranges, drained

tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Make It

ADD boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Place oranges in 6-cup mold; cover with 2 cups gelatin. Refrigerate 30 min. or until set but not firm. (Gelatin should stick to your finger.)

MEANWHILE, refrigerate remaining gelatin 30 min. or until slightly thickened. Whisk in 2 cups COOL WHIP until blended; pour over gelatin layer in mold.

REFRIGERATE 4 hours or until firm. Unmold. Serve topped with remaining COOL WHIP.

How to Unmold Gelatin

Dip mold in warm water for 15 sec. Gently pull gelatin from around edge with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

Fantastic! (and light!) I made this with the mandarin oranges and orange jell-o as directed. Next time I think I'll try strawberry-banana jello with bananas as my fruit! Sounds yummy!

This was an easy recipe to make, and didn't require many ingredients. It unmolded beautifully, and it's very pleasing visually. There's a nice contrast between the mandarin orange layer and the mousse layer. This has to firm in the refrigerator for a while after assembly, so this is a make-ahead recipe.

I served this last night at a birthday party and everyone raved about it. My mother-in-law would not leave until I gave her the recipe.

Recipe was very light and the blend of jello and mouse with the oranges added gave great texture changes. Great appearance, great taste and very easy to prepare.
