I had never cooked with tomatoes with green chiles before. It made it a bit too spicy for my kids, but the flavor was good.

I have made this many times. Using one can of cilantro/ lime rotel, and one can of hot rotel gives it the BEST flavor! My BF requests it frequently. It is strangely addictive.

Very good. used cumin, chili powder, Mexican style diced tomatoes. The whole family loved it. Took longer to cook than posted.

I liked the recipe but it was a little bland. Don't hesitate to spice things up!

Very, very good.....with added spices like cumin and chili powder it is not bland. I also used real brown rice vs. instant and plenty of shredded mexican cheese. My family loves this and I do too!

As suggested by some of the comments, I used black beans, corn, cumin and salsa as substitutes in this recipe. My family and I thought it had great flavor--and was quick, easy, economical and has lots of protein! I'm going to try it again this evening with pinto beans instead.

Great tasting, fast, easy, economical....what more could you ask for? I made some changes to spice it up a bit. I added a packet of taco seasoning, used black beans instead of kidney beans and squeezed some fresh lime juice on before serving. Family LOVED it!

great!...i only use done can of diced tomatoes and added can of corn (drained)....ate leftovers on tortilla. loved it!
