Cooking for one is a challenge, and you don't want to eat something day after day. This has small amount and can be reheated inside a flour tortilla or put inside corn tortillas and topped with salsa and/or cheese and baked. You can also use fajita beef or chicken strips or ground round rather than turkey. It can also be used as a topping over a hand-full of corn or tortilla chips in a bowl. Top with sour cream and green onions. This is an extremely adaptable, inexpensive recipe.
