I made these muffins for my kids for breakfast for the week and they really liked them. My husband and I also enjoyed them, though I think they could have used a bit more sugar, not enough to be super-sweet, but just a bit sweeter. I liked all of the apple chunks inside.

I tried these muffins but instead of putting cottage cheese i put applesauce instead and i thought they were wonderful! very good with your favorite jelly too!

These were good. Nothing I'd rave about. The batter was so dry that not all of the flour would mix in so I added quite a bit of unsweetend applesauce. I took people's advice and added more cinnamon and vanilla then the recipe called for but I still didn't get a flavor pop. I'm gonna try having one for breakfast in the morning, warm and with butter. These are good just not extrodinary.

very good, I used whole wheat flour to make it healthy. kids loved it.

My 2 year old loved these. The batter is very thick but don't be fooled by it. The muffins come out tender and very moist. You'd never guess there was cottage cheese in them if you didn't have the recipe. My batch made 24 mini muffins and 6 regular muffins. Next time I'd try adding more cinnamon and/or vanilla to kick up the taste a bit.

I would make this recipe again, but the next time I would not make them in the muffin liners. The batter was so thick that it made it stick to the liners after baking. Also I would add a little more cinnamon to the recipe. But it was excellent!
