Been making this for awhile now, but i make a pina colada dip to go with it. I have made it with bonless chicken breast. Company always impressed.

whole family liked it but didn't care for the sauce. that's why they gave it a 4. made a peanut satay sauce & they gobbled it down. loved that it was so easy to make. will also try w/ shrimp.

My mom and I make this often. We don’t add the garlic. Instead of the apricot sauce we use grape jelly.

One of my favorite things to make and eat! My husband and son (2yrs old) love it. The dipping sauce is a MUST! Note: I tend to need a little more of the coconut/flour mixture, so I just add a little extra of everything. Also, spraying the pan with non-stick spray helps.

I wouldn't make it again just because it took a lot of work to handle the chicken (I live in dorms). I didn't make the sauce. My taste buds were confused though with the coconut flake pairing and garlic powder. *Plus, it was a bit of a messy dish. Cleaning off the coconut mixture after it had baked with the chicken was a pain. In fact, the oven dish is still soaking in my sink as I write (made it last night).

Very delicious and quick to make. I definitely recommend making the dipping sauce to go with the chicken tenders.
