Watergate Cake

This classic tube cake made with yellow cake mix, instant pistachio pudding mix, club soda and walnuts is dusted with powdered sugar before serving.

pkg. (2-layer size) yellow cake mix

pkg. (4-serving size) JELL-O Pistachio Flavor Instant Pudding

cup club soda

1/2

cup oil

eggs

1/2

cup chopped PLANTERS Walnuts

Tbsp. powdered sugar

Make It

PREHEAT oven to 350°F. Place cake mix, dry pudding mix, soda, oil and eggs in large bowl. Beat with electric mixer on low speed just until moistened. Beat on medium speed 2 minutes, scraping side of bowl occasionally. Gently stir in walnuts.

POUR batter into greased and floured fluted tube pan or 10-inch tube pan.

BAKE 40 to 45 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes. Remove cake from pan; cool completely on wire rack. Sprinkle with powdered sugar just before serving.

The original icing for this cake is made with 2 pkgs of dehydrated "Dream Whip" and 1 box of instant pistachio pudding. Make the "Dream Whip" as usual, then blend in the pudding until completely mixed in. Spread on the cooled cake. This keeps the cake moist and tender.

My fellow teachers ask for this cake every time we have a potluck. I make it in a loaf pan and ice it with cool whip mixed with pistacio pudding. I then add coconut and chopped walnuts. My family also loves this cake.

I have a similar recipe that is baked in a 13x9 pan. It has a "frosting" made of prepared pistachio pudding and cool whip. I also remember this as a cool summertime treat. Yum!

Great and easy to make. I made it in a regular cooking pan not the round one like it tells you to make it in and it was great!! The whole family enjoyed it!

This is one of the best cakes I've ever tasted. I made it for a friend, and she absolutely loooved it! My husband eats big chunks of it every time I bake it. It's so moist, and the walnuts makes it taste even better.

This is also very good as a sheet cake. Top it with prepared pistachio pudding mixed with a tub of Cool Whip...it's heavenly!!

Incredibly wonderful! Very moist and full of flavor. I only had 2 eggs on hand, but baked it anyway and it still came out perfect. This one's a keeper. :)

I've made many variations on the cake-mix-with-pudding bundt cake, but this was one of the best I've tried, with a wonderful nutty flavor. The soda is a bit of extra liquid that makes it really moist -- I forgot to pick up club soda, so I used diet ginger ale I already had and it was fine. Was a big hit at my office this morning, definitely a keeper.
