I was looking for a cheesecake that was quick and easy, yet different from the traditional. I had all the ingredients on hand so that also attracted me to give it a try. My first thought was that this might be a little 'too sweet' for me because of the brown suger and carmel. To my surprise the pecans offset the sweetness. Very nice combination of flavors. A hit all around in my house. Hint...I had no carmel ice cream topping so I melted some kraft carmels (about 12 to a 1/2 teaspoon of water) and drizzeled that over the top. I have made this cake twice in a week, by request. Plan to try Phili 3-step mini cheesecakes this afternoon. I'll let you know the results of that also.
