Leftover Turkey Soup

This easy soup is a delicious way to use up leftover turkey. It has fresh veggies in it, too, and can be served with crackers.

What You Need

Tbsp. oil

1/2

cup chopped onions

carrot, sliced

stalk celery, sliced

cans (14-1/2 oz. each) chicken broth

cups water

env. GOOD SEASONS Italian Dressing Mix

cups cubed cooked turkey

1/2

cup bite-sized pasta, uncooked

Make It

HEAT oil in large saucepan on medium heat. Add onions, carrots and celery; cook 3 to 5 min. or until crisp-tender, stirring occasionally.

STIR in broth, water and dressing mix. Bring to boil.

ADD turkey and pasta; cover. Simmer on medium-low heat 10 to 12 min. or until pasta is tender.

Use fun shapes of pasta, such as stars or alphabets. Smaller pastas may cook in a shorter time, so follow package directions for suggested cooking times.

Special Extra

Serve topped with KRAFT Shredded Cheese, KRAFT Grated Parmesan Cheese or coarsely crushed NABISCO Crackers.

I made this recipe after making a big turkey dinner. I had a lot of turkey left over and looked at this web site for ideas. This is the best soup I have ever had. It does not even compare to the canned soups, or even the homemade soups I have tried in the past. I want to compliment the person who designed this recipe. Very Good!!!!

I am learning to become a more experienced cook. After Thanksgiving we had alot of turkey left over. I doubled this recipe and it was great. My husband told me it was the best soup he had ever had. I will for sure make this again.

Very quick and easy. Great way to get rid of alot of leftover turkey. Picky husband ate it too! I will be making this again soon!
