My kids who normally hate soup of any kind ate their first and second helpings with smiles! It also smelled really great while cooking.

I find that with other soups that I make with italilan dressins, and I use the low sodium type, that if you saute' the dressing and other seasonings with the meat and veggies, that you have a much better flavor, just as good the same day, as leftover soup. I will try this recipe.

I will share this recipe with friends and family. I added some oregano just to add a little more color, my kids even enjoyed the soup. They didn't care for the name thinking, oh great left over anything is a no, no in my house. It usually means something grose. But now for Christmas I'm trying your Cornish Hens recipe and they can't wait . I don't know why I waited so long to use your web site. Thanks for all your hard work.

This is one of those neat dishes that are fast, good and inexpensive. However, I used turkey broth (rather than the recommended chicken broth). I made the broth by putting the turkey carcus into a pot with a gallon of water and a chopped up onion, let it simmer for three hours, and strained out the bones and skin. This makes an excellent stock for use with leftover turkey.

Wonderful, tasty and fast. Great way to use leftover turkey for cold days. I used egg noodles and put it in the crock pot, to make it even easier and supper was ready when we all got home from the work/school day!

Quick, easy and a great way to use left over thanksgiving turkey. My family appreciates a light meal like this after all the 'power eating' they did on thanksgiving!

This is a great way to use leftovers. Also, I like to make a big batch and freeze it in several containers .
