Pork Tenderloin with Roasted Vegetables recipe
TIP: mix it up by changing out the veggies. We've used zucchini, butternut squash, & cauliflower with the sweet potatoes.

This sounded really good, but it didn't work out for me. My sweet potatoes did not get done in the amount of time specified. I did put in a peeled sliced apple to make it a nice fall dinner. My husband ate his pork and left the table without a comment, so that's not a good sign.

Yes, this recipe is easy, but that's about the only good thing I can say about it! Sweet potatoes just don't taste good with Italian dressing, and Shake 'n Bake is, well ... Shake 'n Bake. I would not recommend this recipe!

Substituted white potatoes for sweet poataoes- very good, but potatoes under pork were a little mushy!

Very simple and tasty! Next time I'll try simple herbs on the pork -- I'm sure it will be great too! The sweet potatoes came out perfect; not mushy, carmelized nicely and interesting taste. Everybody cleaned their plates!

My husband loves sweet potaoes and this variation was a hit. I omitted the onion in the potatoes and topped the meat with a large sweet onion - sliced and caramelized. I also moistioned the meat with wassabi flavored mayo instead of water. Will be making this often. Note: I made it again and found that the potatoes took too long to cook through and had to microwave them. Next time I will partially cook them by boiling before hand. Really good though!
