There's no sweeter use for two cans of sweet potatoes than this yummy casserole. Bake just until the marshmallows on top are lightly browned.

This recipe is awesome. When my son saw the sweet potatoes, he immediately asked me to make my sweet potatoes with the mini marshmallows. This is awesome since he is only nine. However, I do make one alteration to the recipe. I use fresh sweet potatoes and bake them on a cookie sheet. Once they are fully baked, I slice them down the middle and scoop out the inside. Then I add the magarine, cinnamon, nutmeg, and salt and beat well. Finally, the mixture is placed in the greased casserole dish and the mini marshmallows covering the top. Then I bake as directed. They are awesome, especially for the holidays. I made them for the first time two years ago and now I have several requests every year.
I thought this was a fantastic dish. At first I wasn't sure if it would be particularly sweet without the addition of brown sugar. The marshmallows and naturally sweet Orange Juice gave it the sweetness required, but not too much; just enough to blend with the flavor of the yams. It was incredbly simple to make, so much so don't just wait for the holidays. I did it for Sunday dinner and had plenty for leftovers too.
