I HAVE MADE MANY OF THESE REFRESHING "COOLWICHES" AND WE LOVE THEM. WE OPEN THEM AND PUT FRESH STRAWBERRIES IN THEM, WHEN THEY ARE IN SEASON, AND THEY ARE WONDERFUL ANY WAY YOU EAT THEM!

I tried this recipe and it was good, and I tried it again with chocolate graham crackers and it was even better! They tasted exactly like ice cream sandwiches!

Try adding mini chocolate chips to the Cool Whip .... my grandkids think it beats ice cream.

If you're not on a restricted diet try spreading peanut butter on the grahams and using chocolate ice cream.

I use this all the time and use it with chocolate grahams too. It is a quick treat for a diabetic.
