This was a delicious dish,I marinade my salmon in the vineaigrette for 30 min before preparing. This is a great way to serve baked salmon the mushrooms, tomatoes & spinach was a good combination for the salmon and the sun-dried tomato vineaigrette gave it a superb taste.

I used skinless salmon fillets and bought a bag of baby spinach leaves instead of chopping the spinach. The prep was so easy and the dinner turned out awesome! It was a restaraunt-quality meal!

This is the PERFECT cooking-for-one recipe!! I buy the individually wrapped frozen fish filets (and chicken breasts). I thaw the filet out while at work and prepare this recipe in an aluminum foil packet. It's delicious, healthy, economical, and requires no clean-up - truly perfect!

I tryed this last night and I loved it. My family didn't like it for various reasons. But I will make again for myself. I added some minced garlic and I used Light Balsamic Vinaigrette instead of the Sun dried Tomato it turned out out great!
