Baked Salmon with Tomatoes, Spinach & Mushrooms

It was soooo easy and fast. The taste was incrediable.

We loved this. My husband is a fisherman and I am always looking for a new way to prepare the fish.

My husband and I had this last night. He loved it. I'm not a fish eater but I have to admit, this was very tasty. We will have this again minus the mushrooms.

We have made this twice! Delicious and easy! Marinated salmon in dressing overnight for a little extra punch. If you don't like cooked veggies then use those ingredients for a salad instead!

This has got to be one of the best dishes that I have ever had. The salmon was very succulent and moist. We eat a lot of gourmet food, and my husband said it was better than anything that we could get at a 5 star restaurant. Best part is, it was extremely easy to prepare. I used more mushrooms than the recipe called for and will sautee them a little beforehand to make them a little more tender.

This recipe was awesome, I will definately be making it again! It was very easy, quick, and tasted great. Its rare to find a reciepe that doesn't need any seasoning (salt, pepper..) other than what is called for but this was good as is.

I made this for a friend who is a bit of an epicurean, and she absolutely adored it, as did I. It's super simple. If you are baking one big filet rather than a few small ones, you will need to leave it in the oven for an additional 10-20 minutes. I strongly recommend this dish and to round out the meal, brown rice and asparagus are perfect!
