I'm not a huge fan of salmon, but I made it for my fiance and he loved it. I even liked it enough to finish my serving!!! Now I can enjoy salmon right along with him.

The vegetable mixture looked so colorful and pretty as I was spooning it over the salmon, that I was tempted to eat it as a salad right then. Next time I plan to do just that, serve the veggies as a side salad, and cook the salmon with a coating of the sundried tomatoe vinagrette. My whole family ate this!

This was one of the best salmon dishes I have ever had and my guests all agreed! The salmon soaked up all of the flavor of the veggies which was great for salmon which can tend to be bland. The topping would work well over chicken or beef as well.

This is a great alternative way to cook salmon....the salmon came out very tender and moist....everybody loved this dish....very easy to make!

This has now become my main salmon recipe. I used 1/2 cup more mushrooms and sprinkled the fish with garlic seasoning. Even my 7yr old son ate it.

Great dish! Tastes expensive, yet it wasn't and so EASY to make with little time preparing it. My family would eat this again, and that is saying a lot coming from them. The combination of the vinagrette and spinach/muchroom is excellent!
