Delicious and very easy to make. To cut prep time you can buy the pre-cut & pre-cleaned spinach and the pre-sliced and pre-cleaned mushrooms. The salmon was absolutely light, delicious, flakey. Can't wait to have this one again. You can take the left over spinach & mushrooms and make a nice salad, just add hard boiled eggs, some grated cheese, bacon or bacon bits and your favorate dressing and viola you have a light meal.
