Oh my, was this sooo good! This was one of the very best recipes for Salmon I have tried in a long time. I loved that there was plenty of fresh veggies incorporated in the recipe and that it was fast and easy to prepare. I wil definitely make this a regular dish.

I loved this recipe! I did make a few changes though... I removed the mushrooms, and seasoned the fish with 3/4 packet of Italian Dressing mix and a little bit of olive oil. After marinating for about a 1/2 hour, I chopped the tomato and spinach, then baked! I'm not a fish lover yet, (I'm working on it) but I LOVED this recipe!

I made it with Talapia instead of Salmon and it was great. I also increased the amount of topping which I would do again.

I have made this recipe at least 5 times..it is wonderful...taste,eye appeal, and healthy...I could not find the dressing called for, but found another brand with a "fat free"sun dried tomato vinaigrette....so very low fat and tastes like a meal in a fancy restaurant....a good company main dish also........

I have made this dish 2 times and both times my husband raved about how good it is. I also marinate my salmon in the sundried tomato dressing for about 30 minutes before cooking.
