This was great and exactly what I was craving. However, I thought it needed more lime juice and up the recipe to 1/3c. I believe next time I will even add more cream cheese or less cool whip. Never-the-less my co-employees loved it and I will make it again.

Very easy summer cheese cake. It requires very little cook time, and did not heat up the kitchen.

Liked the idea of the coconut crust but found the cake to be almost bland and too light to have a real cheese cake substance..I think this needs some tweeking..more lime juice and lime rind more cream cheese and less cool whip...

I ate this cheesecake at my mother-in-laws house on Father's Day for the first time and it was a HUGE hit it. It has such a light and fluffy taste to it. I made this cheesecake using fat free cream cheese and it still had such flavor. You have to TRY IT!!!!

Simply delicious. We enjoyed it so much last weekend, that we are making it again THIS weekend. It is very simple to make as well.

I made this for a party we were having and everyone loved it!!! It was easy to make and I found out (by mistake) that the coconut crust tastes best when slightly overcooked.

I thought this was a terrific tasting recipe and it looked great also. My husband liked it very much and he does not like cream cheese. He thought it was wonderful. I highly recommend and have already e-mailed to a dear friend. Thank You!!!
