I used bacon instead of sausage and didn't use mushrooms. Very good served with mild salsa.

I made this for our honeymooners who returned from Kauai today. I doubled the recipie and made it in 1 large casserole dish, and cooked it for an additional 10 minutes. It was yummy! and so easy to make. I would highly recommend it to anyone for brunch or breakfast.

I work with a bunch of bachelors that eat cold cereal every morning for breakfast, so when I showed up with this brunch bake at work one day they thought that they had died and gone to heaven.

I made the cheesy brunch bake for father's day and it was a hit. Very rich & filling. The size of the dish is convenient for larger families and gatherings. In the future I've thought of replacing the sausage with broccoli or asparagus for a more healthy/vegetarian style dish.

I made this dish for work the other morning, and everyone one loved it. It didn't have any left over. It has been voted that I bring breakfast every Friday from now on.
