I made this for Mother's Day Brunch-everyone loved it and it was very easy to make! I substituted bacon for the sausage.

I made this for mother's day 2005. Everyone loved it, including me, and i am making it again this weekend. I leave out the sausage, and add peppers and spinach, but it is still excellent. That is another thing i love about this recipe, it is so versitale, you really could put anything in it.

I made this for a weekend breakfast for guests. I browned the sausage, mushrooms and onions a couple days before and kept it in the fridge which made the preparation a snap. Excellent! I can't wait to make it again.

I used bacon instead of sausage and didn't use mushrooms. Very good served with mild salsa.
