I made half the recipe since only one of three of the kids would eat it. Husband, son and I did like it and will make again.

Wow, this recipe was even more delicious than I expected. I made it for our Father's Day brunch and it was a big hit. Everyone loved it. I omitted the tomatoes and mushrooms, but it was still delicious and very easy to make.

I took this to a Christmas brunch and it was gone in about 10 minutes, very yummy. I changed it up a bit for more flavor though. I added a green bell pepper, used a can and a 1/2 of rotel tomatos with green chilies instead of the fresh tomatoes, fully drained, and used sharp cheddar and mozzarella. I also cooked the onions seperate in butter, then the mushrooms and bell pepper in butter seperate, and then cooked the sausage with a little red pepper seasoning for some kick. It was all great, just don't cook veggies with the sausage, takes the flavor away from them.

I made this recipe for Christmas brunch and many times after that. Everyone loved the it, since my husband does not like mushrooms or onions I left those out. Still great flavor.
