I have used this recipe to top many cakes and cupcakes. I have a brother who doesn't like frosting and has asked me in the past to leave part of the cake or a few cupcakes unfrosted, but now that he has tasted this he loves it and so does every one else in the family.

This is a very fun and easy recipe. I have found that if you prepare the frosting a night before and leave it in a seperate bowl it gives the frosting a better taste and texture. I also recommend using White Chocolate flavored pudding mix and a little more powdered sugar in it.

This makes a wonderful, light and delicious frosting. The best thing is that you can make so many great frosting flavors (chocolate, lemon, vanilla, butterscotch, pistachio) - much better than the canned options! Lemon pudding frosting is expecially good on a Lemon Poke Cake....yummm!!

This is a great altrnative to the regular frosting. I believe that a cake can be enjoyed alot more if it's not overwhelmed with sweet icing!

I collected this recipe from a book many years ago and kept it with my most prized recipes. I used this recipe for a cake that I made for my mother, because she doesn't like real sweet frosting, she fell in love with this recipe. It is such a marvelous recipe I had to share it with my friends.
