This is a very good recipe. My husband is not a fan of Mexican food but he loved it too.

These aren't enchiladas, they're burritos. You should do your research. :) I'm from the southwest (Arizona), so I know the difference.

This was super easy to make. My kids seemed to enjoy it. I added sliced black olives and used jack cheese because that is what I had on hand. The beans were really creamy from the cheese and salsa which made them really really good! =) I love Taco Bell brand beans anyway, but the non fat refried worked just as well. yum!

I made the bean recipe. But my family wasn't overly excited. I switch it up and I chop up cooked chicken and turn then into a super easy Chicken enchilada recipe that they ask for over and over again. My sister in law brags to them to her friends!

I made this for my boyfriend and I...he thought they were just ok. I loved them, tasted like a baked burrito. I will definitely make them again for me. I added more cheese on top and when they had cooled a bit I put a dollop of sour cream on each. Very tasty.

this was good. My husband really liked it. More like a buritto than an enchilada. But really good and easy. I followed the directions exatly except I only had 5 tortillias left.

So easy & yummy!! Used fat free beans & had a side of reduced fat sour cream. Big hit with my husband.
