Not only is this tasty, it is SO EASY to make. Prep time is virtually nil and baking is just 20 minutes! I serve this with Spanish rice and it has become one of my husband's favorites. I make this almost once a week.

I would highly recommend this for a quick, easy and good dinner. My husband, 2 yr old son and I all loved it and I will be making this again.

Great meal! My husband raved about it. I added spicy meat to the filling to make it a little heavier, but I loved it. Very easy and fast to make.

Disappointed, was nothing more than a glorified bean burrito. Taste was ok, simple to make, but nothing special.

We really enjoyed this meal. My 3 year old and my husband both liked it. (AMAZING) It was a very simple recipe and it can be modified to make it more you. You can change the salsa to the desired flavor. Really good meal and super quick.

I made this for my family on a busy Saturday, It was easy and my 5 year old helped sprinkle the cheese on top. My family liked it very much.

This was so easy and delicious! I served it with mexican cornbread. One serving was plenty for us. My husband said it was the one of the best enchilada dishes he's ever had (and he grew up in Arizona).
