This is a great recipe. It's very rich. I usually serve it as a dip with tortilla chips. It goes over very well at potlucks and as an appetizer.

This is such a comfort recipe. Even fussy eaters like it. My husband likes Mexican recipes and actually if you are on a low carb diet it is very good.

I even put another layer of tortillas on top and topped it off with some shredded cheese. Served it with salsa and sour cream. My husband and son loved it!

This was a pretty good meal. I used regular velveeta and it still all tasted pretty good. This would definitely be a great contribution to a pot-luck since you can make lots of it at one time.

It tastes great and I first made it 2 years ago and then I lost the recipe and finally found it again and it tastes even better. I don't add the Velvetta with Jalapenos though, makes it too spicy!

We tried this one with some left over chicken and we all enjoyed it. It was quite a tasty dinner and we were glad to try something different.

I made this several times for my pregnant niece. Some nights she didn't feel like eating......but her appetite always returned whenever I took this over to the house. YUM!! Her new baby will probably grow up loving enchaladas

This recipe was very easy and quick to make. This is the type of recipes that I look for because I cook 5-6 times a week and a working mom.
