This is super fast and easy to make. I used diced tomatoes but next time I will drain them because the dip was a bit runny. I served it with salted pretzels but if I was serving it with veggies, I would add some other spices - maybe more red pepper flakes, salt, and/or pepper. Also, use a bowl bigger than 1 qt to make mixing easiest.

I made the not so healthy version of this that can be found on the 2 lb regular Velveeta box. It calls for 10 oz frozen spinach, 1 lb Velveeta, 4 oz Cream Cheese, 1 can Rotel, and 8 slices Bacon. I don't use bacon though. Big hit with my family!

We didn't have crushed red pepper, so I used a mix of paprika, pepper, and red pepper flakes. This dip was excellent - a big hit!

i used rotel and YUM ! love the kick ! this was an awesome new dip to try and was a crowd pleaser ! thanks and happy dipping !

I made this dip for a party and it was good with bread and breadsticks, but I couldn't find light Velveeta so I had to use regular, so it was not a very healthy choice.

I used "Rotel" canned tomatoes to add a little more kick to it, it was great.

I added diced tomato with chilies and 2 tbs of minced garlic was great!!
